Ingredients:
1 cup of pumpkin puree
1/3 cup of granulated sugar
1/3 cup of packed brown sugar
1/2 cup of vegetable oil
2 large eggs
1 teaspoon of vanilla extract
2 cups of all-purpose flour
1 tablespoon of baking powder
1 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1/4 teaspoon of salt
Instructions:
Begin by preheating your oven to 350°F (175°C) and either greasing a muffin tin or lining it with muffin papers.
In a sizable bowl, thoroughly combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until the mixture is smooth.
In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
Slowly incorporate the dry ingredients into the wet pumpkin mixture, stirring until the components are just blended.
Evenly distribute the batter among the muffin cups.
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool for a few minutes before serving.
