Ingredients:
7-8 eggroll wrappers
8 oz cream cheese, softened
1 cup shredded cheddar cheese
5 slices bacon, cooked and chopped
2 jalapeños, finely diced
1/4 tsp pepper
1/4 tsp salt
1 tsp garlic powder
1/2 tsp onion powder
Oil for frying
Instructions:
In a bowl, combine the softened cream cheese, shredded cheddar cheese, cooked bacon, diced jalapeños, salt, pepper, garlic powder, and onion powder. Stir until the mixture is well blended.
Take an eggroll wrapper and lay it flat. Place a generous scoop of the cheese mixture in the center of the wrapper. Moisten the edges of the wrapper with water to help seal.
Fold the sides of the wrapper inward. Then, starting from the corner closest to you, roll the wrapper over the filling tightly, ensuring the edges are sealed.
Repeat with the remaining wrappers and filling.
Heat oil in a frying pan to 350°F (about 1 inch deep). Fry each eggroll for about 1-2 minutes on each side or until golden brown and crispy.
Serve the eggrolls hot with your favorite dipping sauce.
