Ingredients:
1 lb (450 g) ground beef
4 slices bacon, cooked and crumbled
1 cup shredded cheddar cheese
1/2 cup breadcrumbs
1/4 cup finely chopped onion
1/4 cup ketchup
1 large egg
2 tbsp Worcestershire sauce
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/2 cup barbecue sauce (optional, for topping)
Fresh parsley, chopped (optional, for garnish)
Instructions:
Prepare the Meat Mixture:
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the ground beef, crumbled bacon, shredded cheddar cheese, breadcrumbs, finely chopped onion, ketchup, egg, Worcestershire sauce, garlic powder, salt, and black pepper. Mix everything together until the ingredients are fully incorporated and evenly distributed.
Form the Meatloaf Bites:
Lightly grease a mini muffin tin or line it with paper liners.
Scoop the meat mixture into each muffin cup, filling them about 3/4 full. Use the back of a spoon to press and pack the mixture down tightly into each cup.
Bake the Meatloaf Bites:
Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the meatloaf bites are fully cooked through and reach an internal temperature of 160°F (71°C).
If you’d like to use barbecue sauce, brush a small amount over each meatloaf bite during the last 5 minutes of baking for a tangy finish.
Serve:
Once baked, allow the meatloaf bites to cool slightly before carefully removing them from the muffin tin.
Garnish with freshly chopped parsley if desired, and serve them warm for a delicious bite-sized treat!
