Ingredients:
2 pounds frozen tater tots
½ pound ground beef
2 tablespoons taco seasoning
½ cup refried beans
½ cup corn
½ cup black beans
½ cup salsa
½ cup sharp cheddar cheese
½ cup Monterey Jack cheese
Toppings:
Pico de gallo
Sour cream
Fresh cilantro
Avocado slices
Sliced jalapeño
Instructions:
Preheat your oven to 425°F and line a sheet pan with parchment paper. Arrange the tater tots in a single layer on the prepared pan.
Bake the tater tots for 10 minutes, then toss them and bake for another 10 minutes until golden and crisp.
While the tots are baking, heat a skillet over medium-high heat and cook the ground beef until browned and cooked through. Drain any excess grease, then stir in the taco seasoning until well combined.
Once the tater tots are done, switch the oven to broil. Layer the tots with the seasoned beef, dollops of refried beans, corn, black beans, salsa, and a generous sprinkle of both cheeses.
Broil the loaded tots for around 5 minutes or until the cheese melts and becomes bubbly.
Remove from the oven and garnish with pico de gallo, sour cream, cilantro, avocado, and jalapeño slices. Serve immediately and enjoy!
