Ingredients:
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
4 tablespoons unsalted butter, softened
2 cloves garlic, minced
8 slices of bread (French or Italian)
1/2 pound cooked shrimp, peeled and deveined
2 tablespoons chopped fresh parsley
Salt and pepper to taste
Instructions:
In a small bowl, mix the butter and minced garlic until well combined.
Spread the garlic butter mixture evenly on one side of each bread slice.
Heat a skillet over medium heat. Place two slices of bread, buttered side down, in the skillet.
Sprinkle 1/4 cup of mozzarella cheese on each slice of bread in the skillet.
Add a layer of shrimp over the cheese.
Sprinkle another 1/4 cup of mozzarella cheese and 1 tablespoon of Parmesan cheese over the shrimp.
Top with another slice of bread, buttered side up.
Cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
Repeat with the remaining bread and filling.
Sprinkle the grilled sandwiches with chopped parsley and season with salt and pepper.
Cut the sandwiches in half and serve immediately.
