Ingredients:
1 cup graham cracker crumbs
1/4 cup melted butter
1/4 cup granulated sugar
8 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup heavy cream
1 cup diced strawberries
6 small flour tortillas
Oil for frying
Instructions:
Prepare the Graham Cracker Coating:
In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar until combined. Set aside.
Make the Cheesecake Filling:
In a large bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
Assemble the Tacos:
Spoon the cheesecake filling into the center of each tortilla. Top with diced strawberries. Fold the tortillas into taco shapes and secure with toothpicks if necessary.
Fry the Tacos:
Heat oil in a large skillet over medium heat. Fry the tacos until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
Coat in Graham Cracker Mixture:
Roll the fried tacos in the graham cracker mixture to coat.
Serve:
Serve the tacos warm, with extra cheesecake filling or strawberries on the side if desired.
