Ingredients
For the Cookies:
1 cup pecans, chopped
1 cup almond flour
1/2 cup coconut sugar
1/4 cup maple syrup
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
For the Topping:
1/4 cup pecans, halved
1 tablespoon maple syrup
Directions
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, mix together the chopped pecans, almond flour, coconut sugar, melted coconut oil, maple syrup, vanilla extract, baking soda, and salt until well combined.
3. Scoop out tablespoon-sized portions of the dough and roll them into balls. Place them on the prepared baking sheet, leaving some space between each cookie.
4. Gently press down on each cookie to flatten slightly. Top each cookie with a halved pecan and drizzle a little maple syrup on top.
5. Bake for 10-12 minutes, or until the edges are golden. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
