Blueberry Cheesecake Rolls
Ingredients:
For the Rolls:
1 cup graham cracker crumbs
1/4 cup sugar
1/4 cup melted butter
8 oz (225g) cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup blueberry pie filling
For the Topping:
1/2 cup whipped cream
1/4 cup blueberry sauce
White chocolate drizzle
Instructions:
Prepare the Cheesecake Mixture: In a medium bowl, beat the softened cream cheese until smooth and creamy. Add powdered sugar and vanilla extract, mixing until fully combined. Set aside.
Assemble the Rolls: Lay a sheet of plastic wrap on a clean surface. Mix graham cracker crumbs, sugar, and melted butter in a separate bowl until crumbly. Spread this mixture evenly over the plastic wrap. Next, spread the cream cheese mixture over the graham cracker layer. Spoon and spread the blueberry pie filling on top of the cream cheese layer. Use the plastic wrap to carefully roll the layers into a tight roll. Wrap securely and refrigerate for at least 2 hours to set.
Add the Topping: After setting, remove the roll from the refrigerator and slice into even pieces. Arrange the slices on a serving dish, topping each with whipped cream, blueberry sauce, and a drizzle of white chocolate. Serve chilled for optimal flavor.
